Fishing For Something New to Eat During Lent?
In addition to being American Heart Month, February also marks the start of Lent. If refraining from meat on Fridays leads to you wondering what to make for dinner, (or reaching for the phone to call for pizza yet again), it may be time to dive into some dinner options you may not have considered.
Fish is not only a great meal option during Lent, but thanks to it being a rich source of lean proteins and healthy omega-3 fatty acids, it can also help in the fight against heart disease. If you often write off fish thinking it’s too time consuming or too complicated to cook - think again! Matlaw’s makes it as easy as possible to whip up a delicious and healthy seafood meal for your whole family in minutes. Their large selection of seafood varieties and flavors make it possible to make every meatless meal one that every member of your family will love.
One great option to try this Friday is Matlaw’s Frozen Cod Fillets. For a family favorite, try this easy to make recipe:
Herb Roasted Cod
4 – Matlaw’s Frozen Cod Fillets
1 Tbs olive oil
¼ tsp salt
¼ tsp pepper
½ tsp oregano
½ tsp dried thyme
½ tsp dried basil
½ tsp garlic powder
Pre-heat oven to 400 F. In a small bowl, mix together dry ingredients. Place the fillets onto a lightly greased baking tray. Brush each fillet with olive oil. Sprinkle mixed dry seasoning evenly over the top of each fillet. Bake for 20 minutes or until cod is fully cooked (opaque in color). Serve warm with a side of steamed vegetables and your favorite sides.
